Njordstorp Farm Dairy
In our small dairy, we make various organic products from local quality milk from Gillberga and our own herbs. We pasteurize with care and then add the farm's own nutrient-rich acid culture to get as much flavor as possible. Everything is handcrafted, so you get quality cheese with a lot of character.
The flavors are unique and follow the seasons as we produce small batches with the freshest and most local ingredients possible.

Farm ice cream from Njordstorp
We make our ice cream on our farm. All our raw materials and craftsmanship are organically certified by KRAV. The berries and fruits are from our farm, and the milk comes from the neighboring farm in Gillberga. For all our ice creams, we use freshly milked milk. We handle the pasteurization and cream ourselves in our ice cream preparation.
What makes our ice cream different from others? Our ice cream has less air; you are not paying for volume but for ice cream (in regular ice cream, 50% is air that you pay for). Also, the ice cream lacks food additives / E-numbers (emulsifiers, flavors, milk powder, glucose syrup, or colorants) which can cause allergies and long-term problems.
We choose to do this the hard way and use only pure ingredients, and it has gone perfectly. It is hard to wait for our delicious ice cream, but when you are used to regular ice cream, it takes a few minutes for our completely natural cream ice cream to soften to a good consistency (factory ice cream only holds together with additives).
From our organic quality milk, we make among other things.

- Soured delicacy butter
- Quark
- Yogurt including Kefir, Viili, Greek, Bulgarian
- Film milk
We make among other things the following cheeses:
- Fresh cheese with/without herbs
- Salad cheese (type feta)
- Oil-marinated gourmet cheese, cheese with herbs/spices in oil
- Cheese burger / Grilling cheese
- Torpets Caerphilly, hard cheese with a soft edge under the natural rind
- Byälvens Blå – blue cheese. The surface is a mixture of rind and white mold.
- Hösås Tomme – type of parmesan aged at least 1 year
- Gillbergas Goda – semi-soft variety with a lot of flavor
- Farm cheese – various types
- Sand cheese
We make our cheeses by hand and availability is limited. Yogurt etc. is made to order.
