Our 'red' miso, as it is called, is aged for at least one year and made from Swedish KRAV-certified organic fava beans.
The flavour is deep bean miso umami and has fruit in it.
What is red miso or aka miso? Red miso is a generic term for a slightly saltier miso that is darker or reddish-brown in colour than regular (white) miso due to storage. In Japan, it is known as the more luxurious variety.
Our red miso is a thick concentrated paste used for sauces (e.g. vegetarian brown sauce), as a spread, for pickling vegetables, marinating fish or meat, and of course miso soup (we replace stock cubes with this in regular soups). Rich in protein and rich in vitamins and minerals.
It is unpasteurised and gluten-free.
The jar contains 225 ml.
