Torkat Koji rice

Dried Koji rice is fresh finished European organic rice inoculated with our koji culture, dried and ready to use.

Koji rice can be used directly to add unami to various recipes or to make miso, but also for e.g., to make a variety of dishes. to marinate meat, make amazake, shoyu, rice vinegar, mirin or to make shio-koji sauce. You can grind it into a powder and use it in various dishes or directly with chicken (as a rub), fish or vegetables to add umami flavour.

Package of 420 grams of dried koji gives about 550 grams of finished koji. Together with various ingredients, provides about 1200 g to 2 kg of finished miso for different miso recipes.

Storage in the refrigerator extends the shelf life (at least 6 months).
