To maintain a stable temperature, the machine constantly adjusts the heating or cooling power. Temperature settings close to the ambient room temperature will require a very small amount of power, while temperature settings significantly above or below the room temperature will require more power, see specifications.
The sourdough incubator allows you to create a starter feed schedule that works for you. Feed your sourdough once a day, every three days or even once a week. Precise control over a wide temperature range allows you to manage the fermentation rate of your starter like never before and gives you the ability to control when your starter peaks. The time to reach a peak at different temperatures depends on the amount of feed, the level of hydration and the type of flour used. Experiment with your own sourdough to get the desired result.

- 12 °C 2 days / 48 hours 1:4:4
- 20 °C 1 day / 24 hours 1:4:4
