Tempeh starter culture kit
Starter kit to start with tempeh production:
The kit comes as standard:
- Rhizopus culture (select size),
- Description for fava bean tempeh,
- Kombucha vinegar for the production of tempeh and
- Optional; Shelled Fava Beans
Tempeh is a fermented food originating in Indonesia and used as a meat substitute. Tempeh consists of beans and a mushroom mycelium that holds it all together. Tempeh can be cooked in a variety of ways such as frying, stir-frying, deep-frying, deep-frying or stewing.
Traditionally, tempeh is made from soya beans, we use other Swedish-grown legumes or cereals. E.g. fava beans, peas, broad beans, oats, barley or lupin. Legumes should be shelled and split before use.
You will need 2-3 g to make 1 kg of final tempeh. This tempeh holder is suitable for vegetarians and vegans. Adding 2-4 tbsp of kombucha vinegar per kilogram of beans is to help the environment become favourable for the tempeh culture. We have noticed that our vinegar helps mould growth and even the taste is better.
