- Melt the butter and add the vegetables over medium heat.
You can use high heat to get a browned surface, but I usually avoid that.
Let them soften slightly. - Add the flour and let it "cook" for at least 1 minute. Add water and stir.
- Add the herbs.
The herbs I prefer are lovage, parsley, and sage. Feel free to experiment with what you have in the garden and to taste. - Let it simmer for 5-10 minutes.
Possible variations: mushrooms, beans or miso.

- 250 g vegetables e.g. carrots, parsnips, kohlrabi, pumpkin, zucchini
- 2 tbsp flour
- herbs, preferably fresh from the garden or whatever you have dried
- 1 chili
- 200 ml water
- salt
