Recipe:
- Peel, core, and cut the pumpkin into small cubes (~0.5 cm)
- Mix the pumpkin with the other shredded ingredients in a bowl
- Before you put everything in the glass jar, weigh it so you can calculate the amount of salt in the next step.
- Place the mixed pumpkin in the glass jar. Leave 2 cm of air under the lid to prevent it from overflowing.
- Add water so that it covers the vegetables. The total weight minus the weight of the glass jar is the net content, and you add 1.5% salt mixed into the pumpkin mixture.
- Seal the jar and store at room temperature
- Top up with saltwater (1 tbsp/liter) if the level drops.
Place this in the refrigerator after 2 weeks
