Fermented Pumpkin

Recipe:

  1. Peel, core, and cut the pumpkin into small cubes (~0.5 cm)
  2. Mix the pumpkin with the other shredded ingredients in a bowl
  3. Before you put everything in the glass jar, weigh it so you can calculate the amount of salt in the next step.
  4. Place the mixed pumpkin in the glass jar. Leave 2 cm of air under the lid to prevent it from overflowing.
  5. Add water so that it covers the vegetables. The total weight minus the weight of the glass jar is the net content, and you add 1.5% salt mixed into the pumpkin mixture.
  6. Seal the jar and store at room temperature
  7. Top up with saltwater (1 tbsp/liter) if the level drops.

Place this in the refrigerator after 2 weeks

  • 1 kg firm food pumpkin
  • 1 yellow onion
  • 2 chili peppers
  • 5 garlic cloves
  • 2 tbsp finely shredded ginger
  • ½ tsp cloves
  • salt
