Recipe:
- Make the rabbit dry and to the size that fits the pan you are using. The legs can be inserted into the carcass if necessary. Dust all parts with flour.
- Melt butter or oil and wait until hot. Brown rabbit pieces and keep separate until all are done.
- Stir in the vegetables and stir until slightly brown (carrots or the like mostly brown first due to sugar content). Add rabbit pieces and water (alternatively use your favorite meat broth or red wine).
- Add the herbs and plums. Let everything sit for 1 - 1.5 hours.
- If the meat comes off the bones, the rabbit is cooked.
- Garnish it before serving with some parsley.
We like it served with potatoes and red cabbage. The combination with wild rice is also good and it goes well with most vegetables.
