Koji rice flour is fresh finished European organic rice inoculated with our koji culture, dried and ready to use.
Organic Koji rice flour can be used directly to add unami to various recipes or to make miso, but also for e.g. for the production of food. to marinate meat, make amazake, shoyu, rice vinegar, mirin or to make shio-koji sauce. You can grind it into a powder and use it in various dishes or directly with chicken (as a rub), fish or vegetables to add umami flavor.
Rice koji rice flour or koji rice powder is dried raw koji processed into finely powdered form. All the power of the enzymes remains. Since it is a powder, it can easily be made into amazake, salt koji, soy koji, sweet sake, etc. without any milk lumps. Also enjoyed mixing this with bread and cake. This koji rice powder is also suitable for meat tenderization. Use it with various dishes or directly with chicken (as a rub), fish or vegetables to add umami flavor.

Package of 200 grams of dried koji flour corresponds to about 275 grams of koji.
Storage in the refrigerator extends the shelf life (at least 6 months).
Ingredients: European organic rice*, Aspergillus oryzae GMO-free.
Recipe Koji Rice Steak:
- Sprinkle rice over all sides of the steaks, pressing down to cover. Transfer to a wire rack on a baking tray lined with baking paper. Refrigerate uncovered for 2 to 3 days.

Use the back of a knife to scrape the koji rice off the steaks. Season the steaks with salt and pepper.
- Heat the pan over medium heat. Melt the butter and place the steak in the pan. Fry on one side for 2 minutes, turn and fry the other side.

Continue cooking until the steaks are pink in the middle, 5 to 7 minutes. A meat thermometer inserted into the centre should read about 55°C.
- Place the steaks on a warm plate and let them rest for 10 minutes before serving.
